Hummus is a classic favourite but sometimes you just need to switch it up! Check out this recipe from Jasmin for a fresh and vibrant hummus that you can enjoy any time of day.

Prep time – 10 minutes | Cooking and cooling time – 17 minutes
250g of fresh or frozen cauliflower florets
60 mls of extra virgin olive oil
2 cloves of garlic minced
½ tsp of salt
1 tbsp of Kape pistachio butter
1 tbsp of tahini
Juice from ½ lemon
1 tbsp of harissa sauce
Chopped mixed olives
Chopped Kape activated pistachios
Place the cauliflower in a pan and add boiling water and cook for 5-7 minutes until soft.
Drain the water and place all the ingredients into a blender. Blend until a smooth paste forms.
Allow the hummus to cool before garnishing.
Enjoy with vegetable sticks or flatbread.
