Lentil and Almond Butter Burgers (Paleo & Vegan)

Prep time: 30 mins | Cooking Time : 20 mins

Ingredients:

400g Cooked Yellow Lentils (around 200g dry lentils)
100g Boiled Cauliflower (thinly diced)
1/2 medium size onion
3 medium garlic cloves
2 tbs Kape’s Almond Butter
1 tbs Coconut flour
1 tbs Chia seeds
1/8 tsp Salt
1/4 tsp ground coriander
1/4 tsp sumack
1/8 tsp ground black pepper

Method:

Boil the lentils according to the instructions on their packaging.
Also, boil the cauliflower until almost tender.

Meanwhile, finely dice the onion and fry on a medium heat with a teaspoon of olive oil.

Finely dice garlic. Once the onion is translucent, add garlic to the pan. Fry for another 3 - 5 minutes, stirring frequently.

Add the onions and garlic mixture into the lentils.

Thinly dice boiled cauliflower and add to the lentil mixture.

Add salt, spices, chia seeds, coconut flower, and Kape almond butter. Mix well and let the mixture stand for at least 5 minutes.

Heat the pan to medium heat with a splash of vegetable oil .

Shape the lentil mixture into a patties. If the mixture is too wet add one or two teaspoons of coconut flour.

Place the patties onto the frying pan. Fry for 8 minutes. Carefully, using a wide enough spatula turn the patties over.

After 7 minutes turn the heat off and let patties stand without a lid for 5 minutes.

Place them on your favourite burger bun and add your favourite burger toppings.
